Ingredients

  • 3 lbs beef short ribs
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon dried thyme

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the short ribs with salt and pepper.
  3. Heat olive oil in a large Dutch oven over medium-high heat.
  4. Brown the short ribs on all sides, then remove from the pot.
  5. Add onion and garlic to the pot, sauté until soft.
  6. Stir in beef broth, red wine, tomato paste, Worcestershire sauce, bay leaf, and thyme.
  7. Return the short ribs to the pot, cover, and transfer to the oven.
  8. Bake for 3 hours, until the meat is tender.
  9. Remove from oven and let rest for a few minutes before serving.
