Ingredients

  • 4 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the short ribs with salt and pepper.
  3. Heat olive oil in a large pot over medium-high heat.
  4. Sear the short ribs on all sides until browned. Remove and set aside.
  5. Add onion, carrots, and garlic to the pot. Sauté until softened.
  6. Stir in tomato paste, then add red wine and beef broth.
  7. Return short ribs to the pot with thyme.
  8. Cover and transfer to the oven. Cook for 3 hours.
  9. Remove from oven and let rest for 10 minutes before serving.

Notes

  • For best results, use bone-in short ribs.
  • Serve with mashed potatoes or polenta.
  • You can make this dish a day ahead and reheat.
