Ingredients

- 4 pounds beef short ribs
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 sprigs fresh thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 300°F (150°C).
- Season the short ribs with salt and pepper.
- Heat olive oil in a large pot over medium-high heat.
- Sear the short ribs on all sides until browned. Remove and set aside.
- Add onion, carrots, and garlic to the pot. Sauté until softened.
- Stir in tomato paste, then add red wine and beef broth.
- Return short ribs to the pot with thyme.
- Cover and transfer to the oven. Cook for 3 hours.
- Remove from oven and let rest for 10 minutes before serving.
Notes
- For best results, use bone-in short ribs.
- Serve with mashed potatoes or polenta.
- You can make this dish a day ahead and reheat.
