  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste
  • 1 cup beef broth

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a small bowl, combine the olive oil, minced garlic, rosemary, thyme, salt, and pepper to create a paste.
  3. Rub the paste all over the prime rib roast, ensuring it’s evenly coated.
  4. Place the roast bone-side down in a roasting pan. Insert a meat thermometer into the thickest part of the roast, avoiding the bone.
  5. Roast in the preheated oven for 20 minutes to develop a crust.
  6. Lower the oven temperature to 325°F (165°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (125°F for rare, 135°F for medium-rare, 145°F for medium).
  7. During the last 30 minutes, add beef broth to the bottom of the pan to keep the roast moist.
  8. Once done, remove the roast from the oven and tent it with aluminum foil. Let it rest for 15-20 minutes before slicing.
  9. Slice the roast against the grain and serve with the pan juices.
