- 1 (5-6 pound) bone-in prime rib roast
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
- 1 cup beef broth
Instructions
- Preheat your oven to 450°F (230°C).
- In a small bowl, combine the olive oil, minced garlic, rosemary, thyme, salt, and pepper to create a paste.
- Rub the paste all over the prime rib roast, ensuring it’s evenly coated.
- Place the roast bone-side down in a roasting pan. Insert a meat thermometer into the thickest part of the roast, avoiding the bone.
- Roast in the preheated oven for 20 minutes to develop a crust.
- Lower the oven temperature to 325°F (165°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (125°F for rare, 135°F for medium-rare, 145°F for medium).
- During the last 30 minutes, add beef broth to the bottom of the pan to keep the roast moist.
- Once done, remove the roast from the oven and tent it with aluminum foil. Let it rest for 15-20 minutes before slicing.
- Slice the roast against the grain and serve with the pan juices.
