- 1 lb (450g) boneless chicken breasts
- 2 cups cherry tomatoes, halved
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- Salt and pepper to taste
- 4 cups mixed greens
- 1/2 cup feta cheese, crumbled
- Balsamic glaze for drizzling
Instructions
- Preheat your grill or stovetop grill pan over medium-high heat.
- In a large bowl, combine the chicken breasts, cherry tomatoes, olive oil, garlic, dried basil, salt, and pepper. Toss to coat the chicken and tomatoes evenly.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). During the last few minutes of grilling, add the cherry tomatoes to the grill.
- Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before slicing.
- In a large serving bowl, place the mixed greens, top with the sliced chicken, grilled cherry tomatoes, and crumbled feta cheese.
- Drizzle with balsamic glaze just before serving.
Notes
- Feel free to substitute the chicken with shrimp or tofu for a different protein option.
