  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese
  • 1 cup crushed buttery crackers
  • 1/2 cup mayonnaise
  • 2 large eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large saucepan, bring water to a boil and add the sliced squash and chopped onion. Cook until tender, about 5 minutes. Drain well.
  3. In a mixing bowl, combine the cooked squash and onion with the cheddar cheese, crushed crackers, mayonnaise, beaten eggs, salt, pepper, garlic powder, and onion powder. Mix until well combined.
  4. Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
  5. Top with additional crushed crackers and a sprinkle of cheese if desired.
  6. Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the casserole is set.
  7. Let it cool for a few minutes before serving.
