- 4 cups sliced yellow squash
- 1 cup chopped onion
- 1 cup shredded cheddar cheese
- 1 cup crushed buttery crackers
- 1/2 cup mayonnaise
- 2 large eggs, beaten
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Preheat your oven to 350°F (175°C).
- In a large saucepan, bring water to a boil and add the sliced squash and chopped onion. Cook until tender, about 5 minutes. Drain well.
- In a mixing bowl, combine the cooked squash and onion with the cheddar cheese, crushed crackers, mayonnaise, beaten eggs, salt, pepper, garlic powder, and onion powder. Mix until well combined.
- Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
- Top with additional crushed crackers and a sprinkle of cheese if desired.
- Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the casserole is set.
- Let it cool for a few minutes before serving.
