A creamy and cheesy casserole made with fresh yellow squash, perfect as a side dish for any meal.

- 4 cups yellow squash, sliced
- 1 cup onion, chopped
- 1 cup cheddar cheese, shredded
- 1 cup sour cream
- 1/2 cup milk
- 1 cup crushed buttery crackers
- 1/4 cup butter, melted
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large pot, bring water to a boil and add the sliced yellow squash and chopped onion. Boil for about 5 minutes until tender. Drain and set aside.
- In a mixing bowl, combine the cheddar cheese, sour cream, milk, salt, and pepper. Mix well.
- Add the drained squash and onion to the cheese mixture. Stir until well combined.
- In a separate bowl, combine the crushed crackers with melted butter. Mix until the crackers are evenly coated.
- Pour the squash mixture into a greased baking dish. Top with the buttery cracker mixture.
- Bake in the preheated oven for 30-35 minutes until the top is golden brown and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
