  • 4 cups yellow squash, sliced
  • 1 cup onion, chopped
  • 1 cup cheddar cheese, shredded
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 cup crushed buttery crackers
  • 1/4 cup butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, bring water to a boil and add the sliced yellow squash and chopped onion. Boil for about 5 minutes until tender. Drain and set aside.
  3. In a mixing bowl, combine the cheddar cheese, sour cream, milk, salt, and pepper. Mix well.
  4. Add the drained squash and onion to the cheese mixture. Stir until well combined.
  5. In a separate bowl, combine the crushed crackers with melted butter. Mix until the crackers are evenly coated.
  6. Pour the squash mixture into a greased baking dish. Top with the buttery cracker mixture.
  7. Bake in the preheated oven for 30-35 minutes until the top is golden brown and bubbly.
