- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 cup beef broth
Instructions
- Preheat your oven to 450°F (230°C).
- In a small bowl, mix together the olive oil, garlic, rosemary, thyme, salt, and pepper.
- Rub the mixture all over the rib roast, ensuring it is well-coated.
- Place the roast in a roasting pan, bone-side down. Pour the beef broth into the bottom of the pan.
- Roast in the preheated oven for 20 minutes. Then, reduce the temperature to 325°F (165°C) and continue roasting for about 2 hours, or until the internal temperature reaches your desired doneness (130°F for medium-rare).
- Remove the roast from the oven and let it rest for at least 20 minutes before slicing.
