  • 2 tablespoons olive oil

  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 cup beef broth

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a small bowl, mix together the olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Rub the mixture all over the rib roast, ensuring it is well-coated.
  4. Place the roast in a roasting pan, bone-side down. Pour the beef broth into the bottom of the pan.
  5. Roast in the preheated oven for 20 minutes. Then, reduce the temperature to 325°F (165°C) and continue roasting for about 2 hours, or until the internal temperature reaches your desired doneness (130°F for medium-rare).
  6. Remove the roast from the oven and let it rest for at least 20 minutes before slicing.

  • For an even more flavorful roast, season it a day in advance and refrigerate it uncovered.
  • Use a meat thermometer to check the doneness accurately.
