Ingredients

- 3 lbs beef roast
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 carrots, chopped
- 4 potatoes, chopped
- 1 onion, quartered
- 2 cups beef broth
- 2 teaspoons rosemary
- 2 teaspoons thyme
Instructions
- Preheat your oven to 375°F (190°C).
- Rub the beef roast with olive oil, salt, and pepper.
- Place the roast in a roasting pan.
- Add carrots, potatoes, and onion around the roast.
- Pour beef broth over the vegetables.
- Sprinkle rosemary and thyme on top.
- Cover the pan with foil.
- Roast in the oven for 2 hours.
- Remove the foil and roast for an additional 30 minutes for a nice crust.
- Let the roast rest for 15 minutes before slicing.
Notes
- Adjust cooking time based on roast size.
- Serve with gravy made from the drippings.
- Leftovers can be used in sandwiches.
