- 1 lb (450g) fresh salmon, skin removed and finely chopped
- 1/2 cup (50g) breadcrumbs
- 1/4 cup (60ml) milk
- 1/4 cup (15g) fresh parsley, chopped
- 1 clove garlic, minced
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, beaten
- Olive oil for cooking
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the chopped salmon, breadcrumbs, milk, parsley, garlic, onion powder, salt, pepper, and beaten egg. Mix until well combined.
- Using your hands, form the mixture into small meatballs, about 1 inch in diameter.
- Place the meatballs on the prepared baking sheet, spaced evenly apart.
- Drizzle a little olive oil over the meatballs or spray them lightly with cooking spray.
- Bake in the preheated oven for 15-20 minutes, or until the meatballs are cooked through and golden brown.
- Remove from the oven and let cool slightly before transferring to meal prep containers.
