  • 1/2 cup (50g) breadcrumbs
  • 1/4 cup (60ml) milk
  • 1/4 cup (15g) fresh parsley, chopped
  • 1 clove garlic, minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the chopped salmon, breadcrumbs, milk, parsley, garlic, onion powder, salt, pepper, and beaten egg. Mix until well combined.
  3. Using your hands, form the mixture into small meatballs, about 1 inch in diameter.
  4. Place the meatballs on the prepared baking sheet, spaced evenly apart.
  5. Drizzle a little olive oil over the meatballs or spray them lightly with cooking spray.
  6. Bake in the preheated oven for 15-20 minutes, or until the meatballs are cooked through and golden brown.
  7. Remove from the oven and let cool slightly before transferring to meal prep containers.
