Ingredients
Scale
- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of cherry tomatoes, halved
- 1 cup of cucumber, diced
- 1/2 cup of red onion, diced
- 1/4 cup of fresh parsley, chopped
- 3 tablespoons of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, mix cherry tomatoes, cucumber, red onion, and parsley.
- Add cooled quinoa to the bowl.
- Drizzle olive oil and lemon juice over the salad.
- Season with salt and pepper. Toss to combine.
Notes
- Quinoa can be cooked a day ahead.
- Serve chilled or at room temperature.
- Can be customized with other vegetables.
