A simple recipe for slow cooker corned beef.
Ingredients

- 4 pounds corned beef brisket
- 1 onion, quartered
- 4 carrots, cut into chunks
- 4 potatoes, cut into quarters
- 2 cups beef broth
- 1 tablespoon pickling spice
Instructions
- Place the onion, carrots, and potatoes in the slow cooker.
- Rinse the corned beef and place it on top of the vegetables.
- Pour the beef broth over the meat.
- Add the pickling spice.
- Cover and cook on low for 8-10 hours or until tender.
- Slice and serve with vegetables.
Notes
- Adjust cooking time for desired tenderness.
- Leftovers can be used for sandwiches.
