Ingredients

- 3–4 lbs beef roast
- 2 packets onion soup mix
- 1 cup beef broth
- 4 carrots, chopped
- 4 potatoes, chopped
- 1 onion, sliced
- 2 cloves garlic, minced
Instructions
- Place the beef roast in the slow cooker.
- Sprinkle onion soup mix over the roast.
- Add beef broth to the slow cooker.
- Layer carrots, potatoes, onion, and garlic around the roast.
- Cover and cook on low for 8 hours or until beef is tender.
- Serve hot with vegetables.

- For extra flavor, sear the roast before placing it in the slow cooker.
- You can add other vegetables like celery or peas.
