Ingredients

  • 4 cups yellow squash
  • 1 medium onion
  • 3 tablespoons butter
  • 1 package (8.5 oz) cornbread mix
  • 1 cup milk
  • 1 cup cheddar cheese
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, melt butter over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the sliced yellow squash to the skillet and cook until slightly tender, about 5-7 minutes.
  4. In a large bowl, combine the cornbread mix, milk, cheddar cheese, beaten eggs, salt, and pepper. Mix well.
  5. Add the sautéed squash and onion mixture to the bowl and stir until combined.
  6. Transfer the mixture to a greased 9×13 inch baking dish.
  7. Sprinkle breadcrumbs evenly over the top.
  8. Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the top is golden brown.
  9. Let it cool for a few minutes before serving.

Notes

  • You can substitute zucchini for yellow squash if desired.
  • Feel free to add more cheese for a richer flavor.
  • This casserole can be made ahead of time and reheated before serving.
