- 4 cups yellow squash
- 1 medium onion
- 3 tablespoons butter
- 1 package (8.5 oz) cornbread mix
- 1 cup milk
- 1 cup cheddar cheese
- 2 eggs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup breadcrumbs
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, melt butter over medium heat. Add the chopped onion and sauté until translucent.
- Add the sliced yellow squash to the skillet and cook until slightly tender, about 5-7 minutes.
- In a large bowl, combine the cornbread mix, milk, cheddar cheese, beaten eggs, salt, and pepper. Mix well.
- Add the sautéed squash and onion mixture to the bowl and stir until combined.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Sprinkle breadcrumbs evenly over the top.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the top is golden brown.
- Let it cool for a few minutes before serving.
Notes
- You can substitute zucchini for yellow squash if desired.
- Feel free to add more cheese for a richer flavor.
- This casserole can be made ahead of time and reheated before serving.
