A delightful and refreshing summer dessert, this berry trifle layers luscious cream, fresh summer berries, and sponge cake for a perfect treat.


Ingredients

  • 1 large sponge cake
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 cups mixed berries
  • for garnish to taste mint leaves

Instructions

  1. In a large bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  2. Cut the sponge cake into cubes.
  3. In a trifle dish or individual glasses, layer half of the sponge cake cubes at the bottom.
  4. Add a layer of mixed berries over the cake cubes.
  5. Spread half of the whipped cream over the berries.
  6. Repeat the layers with the remaining sponge cake, berries, and whipped cream.
  7. Garnish with mint leaves.
  8. Chill in the refrigerator for at least 1 hour before serving.

Notes

  • You can use store-bought sponge cake or make your own.
  • Feel free to mix and match with different berries based on availability.
  • Add a splash of berry liqueur for an adult version.
