Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup of cherry tomatoes, halved
  • 1 cup of corn (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste
  • 1 cup of chicken broth
  • 1 tablespoon of olive oil
  • Juice of 1 lemon
  • Fresh basil for garnish

Instructions

  1. In a bowl, mix together the olive oil, lemon juice, Italian seasoning, salt, and pepper.
  2. Place the chicken breasts in the crockpot and pour the mixture over the chicken.
  3. Add the cherry tomatoes, corn, red bell pepper, onion, and garlic on top of the chicken.
  4. Pour the chicken broth into the crockpot.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  6. Once cooked, shred the chicken with two forks and mix it back into the sauce and vegetables.
  7. Serve hot, garnished with fresh basil.
