- 4 boneless, skinless chicken breasts
- 1 cup of cherry tomatoes, halved
- 1 cup of corn (fresh or frozen)
- 1 red bell pepper, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of Italian seasoning
- Salt and pepper to taste
- 1 cup of chicken broth
- 1 tablespoon of olive oil
- Juice of 1 lemon
- Fresh basil for garnish
Instructions
- In a bowl, mix together the olive oil, lemon juice, Italian seasoning, salt, and pepper.
- Place the chicken breasts in the crockpot and pour the mixture over the chicken.
- Add the cherry tomatoes, corn, red bell pepper, onion, and garlic on top of the chicken.
- Pour the chicken broth into the crockpot.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once cooked, shred the chicken with two forks and mix it back into the sauce and vegetables.
- Serve hot, garnished with fresh basil.
