- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 lemons (juiced and zested)
- 3 cloves garlic (minced)
- 1 tablespoon fresh rosemary (chopped)
- 1 tablespoon fresh thyme (chopped)
- Salt and pepper to taste
- 2 zucchinis (sliced)
- 1 bell pepper (sliced)
- 1 red onion (sliced)
- 1 cup cherry tomatoes
- 1 tablespoon balsamic vinegar
Instructions
- In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, and pepper.
- Place chicken breasts in a resealable bag and pour marinade over the top. Seal and refrigerate for at least 30 minutes, or up to 4 hours.
- Preheat the grill to medium-high heat. While the grill heats, prepare the vegetables.
- In a large bowl, toss the zucchini, bell pepper, red onion, and cherry tomatoes with olive oil, balsamic vinegar, salt, and pepper.
- Grill the marinated chicken for 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- During the last few minutes of grilling, add the seasoned vegetables to the grill. Cook until tender and slightly charred.
- Serve the grilled chicken with the summer vegetables on the side.
