- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2 tablespoons lemon zest
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
- Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2-4 hours.
- Preheat the grill or oven to medium-high heat.
- Remove the chicken from the marinade and discard the marinade. Grill or bake the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for a few minutes before slicing. Garnish with fresh parsley and serve with lemon wedges.
Notes
- For extra tanginess, marinate the chicken overnight.
- Serve with a side of steamed vegetables or a fresh salad for a complete meal.
- Feel free to adjust the amount of garlic and lemon based on your taste preference.
- For a spicier kick, add some red pepper flakes to the marinade.
- This recipe can also be made using chicken thighs for a juicier result.
