  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 2-4 hours.

  4. Remove the chicken from the marinade and discard the marinade. Grill or bake the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
