  • 4 medium yellow squash, sliced
  • 1 medium onion, chopped
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup crushed crackers (such as Ritz)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, sauté the sliced yellow squash and chopped onion in a little butter until soft, about 5-7 minutes.
  3. In a large bowl, combine the sautéed squash and onion with the cheddar cheese, sour cream, mayonnaise, salt, pepper, and garlic powder. Mix well.
  4. Transfer the mixture to a greased 9×13-inch baking dish.
  5. In a small bowl, combine the crushed crackers, melted butter, and Parmesan cheese. Sprinkle evenly over the squash mixture.
