A creamy and cheesy yellow squash casserole that’s easy to make and perfect as a side dish for any meal.

- 4 medium yellow squash, sliced
- 1 medium onion, chopped
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 cup crushed crackers (such as Ritz)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter, melted
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, sauté the sliced yellow squash and chopped onion in a little butter until soft, about 5-7 minutes.
- In a large bowl, combine the sautéed squash and onion with the cheddar cheese, sour cream, mayonnaise, salt, pepper, and garlic powder. Mix well.
- Transfer the mixture to a greased 9×13-inch baking dish.
- In a small bowl, combine the crushed crackers, melted butter, and Parmesan cheese. Sprinkle evenly over the squash mixture.
- Bake in the preheated oven for 30-35 minutes or until the top is golden brown and bubbly.
- Let cool for a few minutes before serving.
Notes
- For added flavor, you can mix in some cooked bacon or sausage.
- Feel free to add other vegetables like bell peppers or zucchini for variety.
- This casserole can be made ahead of time and stored in the refrigerator until ready to bake.
