- 4 cups yellow squash, sliced
- 1 medium onion, chopped
- 1 cup shredded cheddar cheese
- 1 cup crushed saltine crackers or breadcrumbs
- 1/2 cup milk
- 2 large eggs, beaten
- 1/4 cup melted butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a large pot, bring water to a boil. Add the sliced yellow squash and chopped onion. Boil for about 5 minutes until slightly tender. Drain and set aside.
- In a large mixing bowl, combine the shredded cheddar cheese, crushed saltines (or breadcrumbs), milk, beaten eggs, melted butter, salt, black pepper, garlic powder, and onion powder. Mix well.
- Add the drained yellow squash and onions to the cheese mixture. Stir until fully combined.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is set.
- Let cool for a few minutes before serving.
