  • 1 medium onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup crushed saltine crackers or breadcrumbs
  • 1/2 cup milk
  • 2 large eggs, beaten
  • 1/4 cup melted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, bring water to a boil. Add the sliced yellow squash and chopped onion. Boil for about 5 minutes until slightly tender. Drain and set aside.
  3. In a large mixing bowl, combine the shredded cheddar cheese, crushed saltines (or breadcrumbs), milk, beaten eggs, melted butter, salt, black pepper, garlic powder, and onion powder. Mix well.
  4. Add the drained yellow squash and onions to the cheese mixture. Stir until fully combined.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is set.
